Welcome to our first recipe roundup of 2020! Today’s feature: the Instant Pot®.
By now, it’s likely that you’ve heard of the Instant Pot®. The Kitchn describes the Instant Pot® as “a multi-cooker that does the job of a slow cooker, electric pressure cooker, rice cooker, steamer, yogurt maker, sauté/browning pan, and warming pot. It’s a single appliance that does the job of seven different kitchen appliances or tools.”
Whoa. It’s no wonder that it’s appealing to so many. We’ve heard more than a few times recently that drivers have either purchased an Instant Pot® or received one as a Christmas gift, so we’re rounding up some recipes to try. As usual, there’s a wide variety of recipes here, so no matter your dietary preferences (keto, vegetarian, gluten-free…), be sure to them out! First up, a tried and true favorite:
Carnitas via allrecipes
There’s not much to say about these! They’re easy, tender, and can be served a variety of ways. Leftovers can be frozen for future use.

This recipe uses dried beans, but there’s no soaking time required. It’s quick, easy, and budget-friendly.

Think baked potato soup but minus the potatoes, plus cauliflower. This one requires some pre-chopping of vegetables. Alternatively, you could purchase pre-chopped ingredients to save on time and mess.
